Indulge in dense, fragrant almond buttermilk coffee cake with crispy apples and nutty topping - pure decadence!
Ingredients:
  • 1.5 crispy apples - peeled, sliced into thin wedges, and halved, divided
  • 6 tablespoons sliced almonds
  • 3.5 tablespoons unsalted butter
  • 0.25 cup white sugar
  • 0.25 cup light brown sugar
  • 1 egg
  • 2 tablespoons applesauce
  • 1 tablespoon honey
  • 1 cup buttermilk
  • 0.75 teaspoon almond extract
  • 0.25 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup rolled oats
  • 3 tablespoons butter, melted
  • 0.33333334326744 cup light brown sugar
  • 2 tablespoons milk
  • 1 pinch salt
Instructions:
  • Preheat the oven to a toasty 350 degrees F (375 degrees C) and gently butter an 8-inch baking pan.
  • Layer the apple wedges to cover the bottom and sides of the pan in a single layer.
  • In a saucepan over medium heat, toast almonds by cooking and stirring for 4 to 5 minutes until fragrant. Remove from heat.
  • In a bowl, cream together 3 1/2 tablespoons of butter, white sugar, and 1/4 cup brown sugar using an electric mixer until smooth. Mix in egg, applesauce, and honey until smooth. Then, stir in buttermilk, almond extract, and vanilla extract to complete the batter.
  • In a bowl, mix flour, baking soda, and 1/2 teaspoon salt, then add it to the batter and stir until fully incorporated. Gently fold in most of the remaining apple wedges. Transfer the batter to the pan and sprinkle with 2 tablespoons of toasted almonds on top.
  • Bake in the preheated oven for 35 minutes.
  • Toast oats in a saucepan over medium heat, stirring occasionally, until fragrant and lightly browned, approximately 5 minutes.
  • Combine 3 tablespoons of butter with 1/3 cup of brown sugar in a bowl until mixed. Then, mix in the rest of the almond slices, oats, milk, and a pinch of salt.
  • Arrange the remaining apple slices and oat mixture on top of the cake. Bake until a toothpick inserted into the center comes out clean, about 10-15 minutes. Allow the cake to cool to room temperature for at least 25 minutes before serving.
