Baked buttermilk doughnuts with whisky chocolate glaze

Indulge in winter bliss with homemade buttermilk doughnuts drizzled in a luxurious whisky chocolate glaze.
Ingredients:
  • 100ml milk, plus extra to brush
  • 200g dark chocolate
  • 50.00 ml whisky
  • 300.00g caster sugar
  • 5.00 gm ground cinnamon
  • Chopped almonds, to serve
  • Dark chocolate, shaved, to serve
  • 2 1/2 tsp dried instant yeast
  • 60ml milk
  • 485g plain flour
  • 165ml buttermilk
  • 40g unsalted butter, melted, cooled slightly
Instructions:
  • To make the doughnuts, activate the yeast by combining it with warm milk and a pinch of sugar in a bowl. Let it sit for 10 minutes until it becomes frothy. In the bowl of an electric mixer fitted with a dough hook, mix the flour, remaining sugar, and a pinch of salt. Gradually incorporate the yeast mixture, buttermilk, egg, and butter. Knead on low speed for 5 minutes until the dough is smooth and elastic. Transfer the dough to an oiled bowl (it will be sticky), cover with plastic wrap, and let it rise in a warm place for 1-1 1/2 hours until doubled in size.
  • Transfer the dough to a floured work surface and gently deflate it. Shape it into a sausage and slice it into 10 even pieces. Roll each piece into a ball. Place the balls on two baking paper-lined trays, pressing them into 9cm disks. Use a 3.5cm cookie cutter to remove the centers of the doughnuts. Cover them lightly with oiled plastic wrap and let them rise in a warm place for another hour.
  • Preheat your oven to 200C. Bake the doughnuts on one tray at a time for 8-9 minutes until beautifully golden and fully cooked. Then, transfer them to a wire rack to cool a bit.
  • For the glaze, melt together milk, chocolate, whisky, and 1 tablespoon sugar in a heatproof bowl over simmering water, stirring until smooth. Then, cool slightly before using.
  • Mix cinnamon with the remaining sugar in a bowl. Use a pastry brush moistened with milk to glaze the doughnuts.
  • Coat the doughnuts in sugar mixture, then dunk the tops in glaze.
  • Enjoy warm doughnuts topped with crunchy almonds and delicate shaved chocolate, accompanied by the extra glaze on the side.
