Baked Buttermilk Donuts

Irresistibly light and crispy baked buttermilk donuts, a crowd favorite treat.
Ingredients:
  • cooking spray
  • 2 cups all-purpose flour
  • 1 cup white sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon freshly grated nutmeg
  • 0.5 teaspoon salt
  • 1 cup buttermilk
  • 2 eggs
  • 1 teaspoon baking soda
  • 4 tablespoons vegetable shortening, melted and cooled slightly
  • 1 cup sifted powdered sugar
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and position the rack in the upper-middle. Grease a donut pan with cooking spray.
  • Combine flour, sugar, cornstarch, baking powder, nutmeg, and salt in a large mixing bowl, sifting to blend evenly.
  • Combine buttermilk, eggs, baking soda, and vanilla extract in a small bowl and whisk until smooth.
  • Combine the melted and cooled shortening with the flour mixture, stirring until fully absorbed. Mix in the buttermilk mixture until well combined. Allow the batter to rest for 10 to 15 minutes.
  • Gently fill each donut cup in the prepared pan with a heaping tablespoon of batter. Evenly spread the batter across the bottom of each cup using a spoon; not all the batter will be used in this batch.
  • Place in the preheated oven on the upper-middle rack and bake until beautifully golden brown, for about 12 to 15 minutes. Take out of the oven and allow it to cool in the pan for 2 to 3 minutes before transferring it onto a wire rack.
  • Add the powdered sugar to a small paper bag. Toss the warm donuts in the bag to coat them evenly.
  • Grease the donut pan once more. Fill the pan with batter using tablespoonfuls for the next batch.
  • Bake donuts in the preheated oven on the upper-middle rack for 12 to 15 minutes until golden brown. Allow to cool for 2 to 3 minutes, then remove from the pan and coat with powdered sugar.
