Elevate your baking game with homemade fortune cookies, hiding lucky messages inside!
Ingredients:
  • 2 egg whites
  • 80g (1/2 cup) icing sugar mixture, sifted
  • 45g (1/3 cup) almond meal
  • 40g (1/4 cup) plain flour
  • 50g (2 1/2 tbsp) butter, melted
Instructions:
  • Preheat the oven to 190°C. Cut 3 pieces of non-stick baking paper to line 3 baking trays. Trace 6 circles per sheet using an 8cm cutter as a guide, spacing them 2cm apart. Place the sheets pencil-side down on the trays.
  • Whisk the egg whites in a medium bowl until frothy using a fork. Add the icing sugar and whisk until fully combined. Stir in the almond meal, flour, and butter until well mixed using a wooden spoon.
  • Place dollops of the almond mixture onto each circle on the paper and smoothly spread them out using the back of a spoon. Bake one tray at a time in the preheated oven for 6-8 minutes, or until the edges turn golden brown.
  • Take out the tray from the oven and, swiftly, lift the edge of each cookie with a round-bladed knife. Slip a paper message in the center, fold in half without flattening, then fold in half again crossways to quarter the cookie's size. Set each cookie in a teacup briefly to set, then cool on a wire rack. Repeat with the rest of the cookie mixture and paper messages to create a total of 18 fortune cookies.
