Indulge in a delightful sweet coffee cake with hidden sugary almonds and a lucky surprise coin inside for a special touch of fortune.
Ingredients:
  • 2 cups white sugar
  • 3 cups all-purpose flour
  • 6 eggs
  • 2 teaspoons baking powder
  • 1 cup milk, lukewarm
  • 0.5 teaspoon baking soda
  • 3 tablespoons lemon juice
  • 0.33333334326744 cup slivered almonds
  • 1 tablespoon white sugar
  • 2 tablespoons powdered sugar, or as needed
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 10-inch round cake pan.
  • Cream together butter and 2 cups of sugar in a medium bowl until light and fluffy. Stir in flour until the mixture resembles coarse crumbs. Gradually add eggs one at a time, beating well after each addition.
  • Combine baking powder with milk and combine with the flour mixture. Mix soda with lemon juice and fold into the batter. Transfer batter into the greased pan.
  • After baking in the preheated oven for 20 minutes, add a sprinkle of nuts and 1 tablespoon of white sugar, then bake for an additional 20 to 30 minutes until a toothpick inserted in the center comes out clean.
  • Take the cake out of the oven and make a small hole in the center. Place a quarter in the hole and dust with powdered sugar. Let the cake cool on a rack for 10 minutes before flipping it onto a serving dish. Finish by sifting more powdered sugar on top and serve while warm.
