Vasilopita (Orange Sweet Bread)

Greek New Year's orange sweet bread - fills your home with heavenly aroma while baking.
Ingredients:
  • 1 orange, zested
  • 0.5 cup orange juice
  • 0.5 cup water
  • 1 tablespoon ground cinnamon
  • 3 (.25 ounce) packages rapid-rise yeast
  • 2 cups white sugar
  • 1 cup unsalted margarine (such as Fleischmann's®), melted
  • 4 eggs
  • 7 cups bread flour, or more as needed
  • 1 tablespoon salt
  • 1 tablespoon baking powder
  • 2 coins wrapped in aluminum foil
  • 1 egg white
  • 1 teaspoon vanilla extract
Instructions:
  • Combine fresh orange juice, water, and fragrant cinnamon in a microwave-safe bowl. Microwave until the mixture reaches 110 degrees F (43 degrees C) on an instant-read thermometer, which should take about 1 to 2 minutes.
  • Combine the yeast with the orange juice mixture and allow it to sit until the yeast becomes creamy and frothy, approximately 45 minutes.
  • In the stand mixer bowl, cream together sugar and margarine until smooth. Beat in eggs on high speed for 30 seconds. Stir in yeast mixture and orange zest until fully incorporated.
  • Combine the flour, salt, and baking powder in a bowl, sifting them together. Gradually add this mixture to the stand mixer, using a bread hook attachment to mix until a soft, sticky dough forms, approximately 5 minutes.
  • Place the dough into a spacious glass bowl. Cover it with plastic wrap and allow it to rise in a warm spot until it doubles in size, which should take 2 to 4 hours.
  • Heat the oven to 350 degrees F (175 degrees C) and prepare two round cake pans by greasing them.
  • Divide the dough into 2 equal pieces and place a wrapped coin in each piece. Knead for 2 to 3 minutes, shape into a ball, and put 1 ball of dough in each cake pan. Cover with plastic wrap and let rise until puffy, 2 to 4 hours more.
  • In a small bowl, vigorously whisk together the egg white and vanilla. Then, delicately brush this mixture over the top of the dough.
  • Bake in the oven until a knife inserted in the center comes out with a few crumbs attached, for 30-55 minutes.
