Greek New Year's Day cake with hidden lucky coin for breakfast.
Ingredients:
  • 2 cups white sugar
  • 1 cup butter
  • 3 cups all-purpose flour
  • 6 eggs
  • 2 teaspoons baking powder
  • 1 cup warm milk (110 degrees F/45 degrees C)
  • 0.5 teaspoon baking soda
  • 1 tablespoon fresh lemon juice
  • 0.25 cup blanched slivered almonds
  • 2 tablespoons white sugar
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease a 10-inch round cake pan.
  • In a medium bowl, cream together sugar and butter until light and fluffy. Add flour and combine until crumbly. Beat in eggs one at a time until fully incorporated. Mix together baking powder and milk, then add to the egg mixture, stirring well. Combine lemon juice and baking soda, then fold into the batter. Pour the batter into the cake pan.
  • 1. Preheat the oven and bake for 20 minutes until partially cooked. Take it out to add a sprinkle of nuts and sugar on top, then bake again until the cake is firm to touch, for about 20 to 30 more minutes. 2. Carefully cut a small hole in the cake and insert a quarter, covering with sugar. 3. Allow the cake to cool on a rack for 10 minutes before flipping onto a plate.
  • Enjoy cake while it's warm.
