Greek New Year's sweet bread tradition, finding hidden coin brings blessings.
Ingredients:
  • 0.5 cup warm milk
  • 1 (.25 ounce) package active dry yeast
  • 0.5 cup bread flour
  • 6 cups bread flour
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.75 cup butter, melted
  • 3 eggs, room temperature
  • 2 cups warm milk
  • 2 tablespoons butter, melted
  • 1 egg, beaten
  • 1 tablespoon water
  • 0.5 cup chopped almonds
Instructions:
  • Combine 1/2 cup milk, yeast, and 1/2 cup flour in a small bowl. Cover and allow the sponge to rise in a warm place until almost doubled in size, approximately 45 minutes.
  • In a large bowl, combine 6 cups of flour with sponge, salt, sugar, cinnamon, nutmeg, 3/4 cup melted butter, 3 eggs, and 2 cups of milk. Mix until a stiff dough forms.
  • Place the dough in a greased springform pan. Brush with melted butter, cover with greased plastic wrap, and allow to rise in a warm spot until doubled in size, approximately 60 to 90 minutes.
  • Preheat your oven to a toasty 375 degrees F (190 degrees C), then whip up a shiny egg wash by beating an egg with 1 tablespoon of water.
  • After the dough has risen, place a clean silver coin inside the loaf. Brush the dough with an egg wash and sprinkle chopped almonds on top. Bake in a preheated oven until deep golden brown, approximately 40 minutes.
