Quick and easy dairy-free vanilla pudding made with almond milk - a delightful sweet treat ready in minutes.
Ingredients:
  • 2 cups almond milk, divided
  • 1 (3.5 ounce) package instant vanilla pudding mix
  • 2 teaspoons cornstarch
Instructions:
  • In a small saucepan, combine 1 cup almond milk with cornstarch. Heat over medium heat, stirring constantly, until bubbly for 3 to 5 minutes. Remove from heat and continue stirring for 30 seconds.
  • In a bowl, combine the remaining almond milk with the pudding mix. Using an electric mixer on low speed, blend until very thick for about 1 minute. Then, incorporate the cornstarch mixture into the pudding mixture and mix on low speed for an additional minute.
  • Divide the pudding evenly among 4 serving bowls. Chill in the refrigerator, if desired.
