Decadent dairy-free almond milk pudding with rich cocoa flavor, velvety creaminess, and indulgent chocolatey taste.
Ingredients:
  • 1 cup white sugar, or to taste
  • 0.5 cup unsweetened cocoa powder
  • 0.33333334326744 cup cornstarch
  • 0.25 teaspoon salt
  • 3 cups unsweetened almond milk
  • 1 teaspoon unsalted butter
  • 1 teaspoon vanilla extract
Instructions:
  • In a saucepan off the stove, combine sugar, cocoa powder, cornstarch, and salt. Pour in 1/4 cup almond milk and whisk until smooth and foamy. Gradually add more almond milk, 1/4 cup at a time, whisking well after each addition.
  • Heat the saucepan over medium-high heat and stir constantly until the mixture simmers and thickens, about 5 minutes.
  • Take the mixture off the heat and swirl in the butter until it melts into a velvety texture. Add the vanilla, then transfer the pudding into a serving bowl. Cover and chill in the fridge for a minimum of 30 minutes.
