Easy weeknight pan-fried tilapia with almond panko crust, paired with garlic mashed potatoes or made into a tasty fish sandwich.
Ingredients:
  • 1/2 cup lemon pepper panko bread crumbs
  • 1/3 cup grated Parmesan cheese
  • 1/3 cup sliced almonds
  • 1/3 cup flour
  • 1 teaspoon parsley
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 5 (6oz) tilapia filets
  • 3 tablespoons butter or margarine
Instructions:
  • Combine panko, Parmesan cheese, and almonds in a blender or food processor until coarsely ground. Transfer to a shallow dish. In a separate dish, whisk eggs. In a bowl, mix flour, parsley, garlic powder, and pepper.
  • In a large skillet, melt butter over medium-high heat.
  • Coat tilapia filets in flour, then dip in egg and press into panko.
  • Place the fish into the sizzling skillet; cook until it easily flakes with a fork, about 3 minutes on each side. Serve the tilapia on a platter.
