Almond Pound Cake with Orange Glaze

Delicate almond pound cake infused with orange zest and topped with a citrus glaze.
Ingredients:
  • Cake:
  • 5 ounces (140 g) almond paste (we recommend  Odense almond paste ), grated
  • 1 1/2 cups (300 g) white granulated sugar
  • 4 ounces (1/2 cup or 1 stick) butter, room temperature
  • 4 large eggs
  • 1 teaspoon orange zest
  • 1 teaspoon vanilla
  • 1/2 cup (120 g) plain (full fat) Greek yogurt (or sour cream)
  • 1 1/2 cups (200 g) all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt (if using unsalted butter)
  • Glaze:
  • 1/3 cup (43 g) powdered sugar
  • 2 teaspoons orange juice
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon orange zest
Instructions:
  • Preheat oven to 325°F. Grease a 5x9x3-inch loaf pan with butter or non-stick spray.
  • In a stand mixer, beat almond paste gently, gradually adding sugar until fully incorporated. Increase speed and beat until light and fluffy. Add butter and beat on high for 5-6 minutes. Incorporate eggs one at a time, then mix in orange zest, vanilla, and Greek yogurt.
  • Combine dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt until well mixed.
  • Gradually fold the flour mixture into the butter, almond paste, and egg mixture until smoothly combined.
  • Bake the batter in a prepared loaf pan on the lower middle rack of your oven at 325°F for 50-55 minutes until golden brown. Check for doneness by lightly pressing the top for a springy texture and inserting a tester into the center until it comes out clean. If the loaf starts to brown too quickly, lightly tent it with aluminum foil during baking.
  • Cool on a rack: After baking, allow the dish to cool on a rack for 5 to 10 minutes. Carefully transfer to the rack to cool completely before serving.
  • Prepare the orange glaze: As the cake cools, sift powdered sugar into a bowl, whisk in orange juice and lemon juice, then stir in the zest. Adjust consistency by adding more sugar or juice to your liking.
  • After the cake has cooled, transfer it to a serving plate and elegantly drizzle the glaze all over using a spoon.
