Whisk together almond meal, eggs, and cream for fluffy, gluten-free pancakes - a simple and delicious treat!
Ingredients:
  • 2 large eggs, separated
  • 0.25 cup heavy whipping cream
  • 0.5 cup almond meal
  • 0.25 teaspoon baking powder
  • 1 pinch sea salt
Instructions:
  • Whip egg whites in a bowl with an electric mixer until soft peaks form.
  • In a separate bowl, whip cream, egg yolks, almond meal, baking powder, and salt together until smooth and creamy. Gently fold in egg whites until just combined.
  • Preheat a lightly oiled griddle over medium-high heat. Spoon batter onto the griddle and cook until bubbles form and edges are dry, about 3 to 4 minutes. Flip and cook until golden brown, around 2 to 3 minutes. Repeat with remaining batter.
