Almond Cream-Puff Ring

Decadent almond Bavarian cream filled Choux pastry wheel, topped with chocolate glaze. Easy to make, impressive to serve. Best made ahead for maximum flavor.
Ingredients:
  • 1 cup water
  • 0.5 cup butter
  • 0.25 teaspoon salt
  • 1 cup all-purpose flour
  • 4 eggs
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 1.25 cups milk
  • 1 cup heavy cream, whipped
  • 1 teaspoon almond extract
  • 0.5 cup semi-sweet chocolate chips
  • 1 tablespoon butter
  • 1.5 teaspoons milk
  • 1.5 teaspoons light corn syrup
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) and prepare your baking sheet by greasing and flouring it, or lining it with parchment paper. Use a dinner plate to trace a circle on the sheet.
  • In a 2 quart saucepan over medium heat, mix water, butter, and salt until boiling. Add flour all at once and stir vigorously with a wooden spoon until it forms a ball and pulls away from the sides of the pan. Remove from heat and beat in eggs one at a time until smooth. Drop batter into 10 mounds inside the traced circle on a cookie sheet to create a ring shape.
  • Bake until golden brown in preheated oven. Let rest in the warm oven for an additional 15 minutes. Cool on wire rack, then slice horizontally. Place bottom ring on serving plate, spoon Almond Cream Filling, and top with the other ring. Chill in the refrigerator before serving.
  • Prepare the pudding mix with 1 1/4 cups of milk following the package instructions. Gently fold in whipped cream and 1 teaspoon of almond extract.
  • Prepare the Chocolate Glaze by melting chocolate chips, 1 tablespoon of butter, 1 1/2 teaspoons of milk, and 1 1/2 teaspoons of corn syrup in a double boiler over gently heated water. Stir occasionally until smooth. Drizzle over the chilled ring.
