Apple galettes with cinnamon ice-cream

Make stunning apple galettes using pre-made puff pastry and pair with delicious cinnamon ice-cream.
Ingredients:
  • 1 1/2 sheets (25cm) ready rolled puff pastry
  • 3 medium granny smith or pink lady apples, cored, very thinly sliced
  • 30g almond meal
  • 42.00 gm lemon juice
  • 55g brown sugar
  • 1.5 litre ctn vanilla ice-cream, softened
  • 108.00 gm maple syrup
  • 5.00 gm ground cinnamon
  • 250ml thickened cream
  • 100g brown sugar
  • 50g butter, chopped
Instructions:
  • Place the ice-cream in a large glass bowl, then add the maple syrup and cinnamon. Gently fold using a metal spoon until fully combined. Transfer the mixture back into the ice-cream carton and freeze for 4 hours until firm.
  • Preheat the oven to 220C. Line an oven tray with baking paper. Using a 12.5cm round pastry cutter, cut out 6 discs from the pastry and place them on the lined tray. Sprinkle almond meal over the discs. In a large bowl, toss apple slices with lemon juice and sugar. Arrange the apple slices over the pastry discs. Bake in the preheated oven for 12-15 minutes until the pastry is golden brown, puffed, and the apple is caramelized.
  • In a large frying pan over high heat, mix cream, sugar, maple syrup, and butter for 3-5 minutes until the sauce thickens. Remove from heat.
  • Plate the apple galettes, add a generous scoop of ice cream on top, drizzle with butterscotch sauce, and serve right away.
