Almond- and Peach-Crusted Pork Chops

Whip up a quick and delicious peachy dish from Betty Crocker Bisquick II Cookbook in under 30 minutes!
Ingredients:
  • 2 tablespoons peach preserves
  • 1/2 cup Original Bisquick™ mix
  • 1/2 cup coarsely chopped sliced almonds
  • 1 tablespoon cornmeal
  • 1/2 teaspoon salt
  • 6 pork boneless loin chops, 1/2 inch thick (1 1/2 pounds)
  • 1 tablespoon vegetable oil
  • Chopped fresh parsley, if desired
Instructions:
  • Whisk together egg and preserves in a shallow dish until well combined. In a separate shallow dish, mix Bisquick, almonds, cornmeal, and salt. Dip pork chops in the egg mixture, then coat with the Bisquick mixture.
  • In a large nonstick skillet, heat oil over medium-low heat. Cook pork chops for 15 to 18 minutes, flipping once, until they develop a crispy golden crust and the center is no longer pink. Garnish with parsley and serve hot.
