Summer-inspired tiramisu with quick and easy prep.
Ingredients:
  • 515.00 gm milk
  • 70.95 gm caster sugar
  • 4.40 gm vanilla extract
  • 20.00 gm custard powder
  • 250g mascarpone
  • 441.88 gm thickened cream, whipped
  • 86.63 gm orange juice
  • 62.50 ml peach schnapps (see note)
  • 250g packet sponge finger biscuits
  • 3 large ripe peaches, halved, stones removed, thinly sliced
  • 40.00 ml flaked almonds, toasted
Instructions:
  • In a medium saucepan over medium heat, mix together 1 3/4 cups of milk, caster sugar, and vanilla. Let it come to a simmer. In a small bowl, combine custard powder with the remaining milk until smooth. Add the custard mixture to the hot milk and stir continuously for 3 to 4 minutes until it boils and thickens. Remove from heat, transfer to a bowl, cover the custard with plastic wrap directly on its surface, and allow it to cool.
  • With an electric mixer, blend mascarpone until smooth. Mix in cooled custard on low speed until combined. Fold in whipped cream gently.
  • In a small shallow bowl, mix orange juice and schnapps. Dip half of the biscuits in the schnapps mixture. Arrange over the base of a 2.5L (10-cup-capacity) glass serving dish. Top with half of the peach slices, slightly overlapping, and half of the mascarpone mixture. Repeat the layers. Refrigerate for 3 hours or overnight. Serve sprinkled with flaked almonds.
