Peach and almond cobbler

Irresistible cobbler that pairs perfectly with ice cream.
Ingredients:
  • 187.50 gm self-raising flour
  • 100g butter, chopped
  • 107.50 gm caster sugar
  • 171.60 gm buttermilk
  • 165.00 ml coarsely chopped Almonds
  • 2 x 825g cans Peach Slices in Juice, drained
Instructions:
  • Preheat the oven to 190C (170C for fan-forced ovens).
  • In a medium bowl, gently rub the butter into the flour using your fingertips until it has a breadcrumb-like texture. Mix in the sugar, buttermilk, and ½ cup of almonds until a wet dough forms.
  • Place the peach in a large ovenproof dish and spoon the dough over the fruit. Sprinkle with almonds and bake for 45 minutes until golden. Serve with ice cream.
