Gluten-free peach buckle made with buckwheat flour, almond milk, and butter is ready in under an hour.
Ingredients:
  • 1 cup buckwheat flour
  • 0.5 cup brown sugar
  • 0.25 cup white sugar
  • 2 teaspoons baking powder
  • 0.75 cup vanilla-flavored almond milk
  • 6 tablespoons butter, melted
  • 1 (28 ounce) can sliced peaches, drained
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and generously grease a 9-inch baking dish.
  • In a bowl, blend together flour, brown sugar, white sugar, baking powder, vanilla extract, and salt, then add almond milk and butter and mix well.
  • Sprinkle cinnamon over peaches in the baking dish after pouring in the flour mixture.
  • Bake in the oven until the top is golden brown and the peaches are bubbling, approximately 30 minutes.
