Indulge in this delightful Southern-inspired peach cobbler.
Ingredients:
  • Melted butter, to grease
  • 5 firm just-ripe peaches, halved, stones removed
  • 100g (1/2 cup) firmly packed brown sugar
  • 190g (1 1/4 cups) plain flour
  • 8.00 gm baking powder
  • 25g butter, chilled, cut into 8 cubes
  • 100ml milk
  • Plain flour, to dust
  • 250ml (1 cup) low-fat custard
Instructions:
  • Preheat the oven to 200°C. Grease a 17cm round pie dish with melted butter. Arrange peach halves cut-side down in the dish. Sprinkle with 1 tablespoon of sugar. Bake for 5 minutes until heated through. Remove from oven.
  • In a food processor, combine the remaining sugar, flour, baking powder, and butter until mixture resembles fine breadcrumbs. Slowly pour in the milk with the motor running until a soft dough forms. Dust the dough with flour, wrap in plastic wrap, and refrigerate for 5 minutes.
  • Roll out dough on a floured surface into a 22cm disc, then place over peaches. Cut seven 2cm slits in the pastry. Bake on the top shelf of the oven for about 15 minutes until golden brown. Serve by cutting into wedges and enjoy with custard.
