Irresistible peach cobbler muffins with juicy peaches and a sweet cinnamon streusel topping.
Ingredients:
  • 2 cups white sugar
  • 1.25 cups vegetable oil
  • 3 eggs, lightly beaten
  • 3 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups peeled, pitted, and chopped peaches
  • 0.66666668653488 cup brown sugar
  • 0.66666668653488 cup all-purpose flour
  • 0.25 cup butter, softened
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a muffin tin by greasing it lightly or lining with paper liners.
  • Create delicious muffins by blending sugar, oil, and eggs in a bowl using an electric mixer until creamy.
  • In a large bowl, combine flour, cinnamon, baking soda, and salt. Gradually mix the flour mixture into the eggs until just combined. Gently fold in the peaches, then spoon the batter into the prepared muffin cups.
  • Prepare the streusel topping by combining brown sugar, flour, butter, and cinnamon in a bowl until crumbly. Sprinkle over the muffin batter.
  • Bake in the oven until a toothpick inserted in the center of a muffin comes out clean, for 20-25 minutes. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
