Delicious buttery peach and almond bread.
Ingredients:
  • 300.00 gm self-raising flour
  • 7.50 gm mixed spice
  • 135.00 gm brown sugar
  • 82.50 ml slivered almonds
  • 128.75 gm milk
  • 2 eggs, lightly beaten
  • 50g butter, melted
  • 410g can peach slices in natural juice, drained, halved lengthwise
  • 40.00 gm raw sugar
Instructions:
  • Preheat your oven to 180C. Lightly grease two 8 x 25cm bar pans and line the bases and sides with baking paper.
  • In a large bowl, blend flour and spice by sifting together. Add sugar and almonds, then gently fold in the combined milk, eggs, and butter. Evenly distribute the mixture into the prepared pans.
  • Evenly layer peach slices on each cake, before generously sprinkling with sugar for a delightful sweet finish.
  • Bake for 35-40 minutes until a skewer comes out clean, then cool in pan for 5 minutes before transferring to a wire rack to cool completely. Store in an airtight container.
