Almond-Parmesan crusted tilapia - a delicious twist on a classic fish dish.
Ingredients:
  • 2 eggs
  • 1 teaspoon lemon pepper
  • 1 teaspoon garlic pepper
  • 1 cup ground almonds
  • 1 cup freshly grated Parmesan cheese
  • 8 (6 ounce) tilapia fillets
  • 0.25 cup all-purpose flour for dusting
  • 6 tablespoons butter
  • salt to taste
  • 8 sprigs parsley
  • 8 lemon wedges
Instructions:
  • Combine eggs with lemon pepper and garlic pepper until well blended; set aside. Mix ground almonds with 1 cup of Parmesan cheese in a shallow dish; set aside. Dust tilapia fillets with flour, then dip them in the egg mixture before coating them with the almond mixture.
  • In a large skillet over medium-high heat, melt butter. Cook tilapia until golden brown on both sides, about 2 to 3 minutes per side. Reduce heat to medium, then season fillets with salt as desired. Sprinkle remaining Parmesan cheese over the tilapia, cover, and cook until the cheese has melted, approximately 5 minutes.
  • Place the tilapia onto a beautiful serving dish, then decorate with fresh parsley sprigs and lemon wedges for a beautiful presentation.
