Try our irresistible Peanut Butter Almond Oatmeal Cookies for a modern twist on a classic favorite!
Ingredients:
  • 1.75 cups all-purpose flour
  • 1.25 cups peanut butter
  • 1 cup butter, cut into small chunks
  • 0.75 cup white sugar
  • 0.75 cup packed brown sugar
  • 0.5 teaspoon almond extract
  • 1.5 cups quick-cooking oats
Instructions:
  • Preheat your oven to a perfect 350 degrees F (175 degrees C).
  • Combine and aerate the flour, baking soda, and salt by sifting them together in a bowl.
  • In a bowl, use an electric mixer to blend peanut butter, butter, white sugar, and brown sugar until creamy. Add eggs one at a time, beating well after each addition. Mix in vanilla and almond extract.
  • Gently mix the flour mixture into the creamed butter until well combined; use a wooden spoon to mix in the oats. Shape the dough into 1-inch balls and place them 1-inch apart on a baking sheet. Optional: press a fork into each cookie.
  • Bake until cookies are lightly browned, about 12 to 15 minutes in the preheated oven.
