Authentic Indian Aloo Gobi curry - a must-try!
Ingredients:
  • 1 head cauliflower, cut into 1-inch florets
  • 3 potatoes, peeled and cut into 1-inch chunks
  • 1 teaspoon cumin seeds
  • 2 tomatoes, diced
  • 1 onion, chopped
  • 1 teaspoon curry powder
Instructions:
  • Microwave cauliflower on High for 3 minutes in a large, microwave-safe dish. Transfer to a bowl. Microwave potatoes on High for 4 minutes in the same dish. Combine with cauliflower in the bowl.
  • In a large skillet over medium-high heat, toast cumin seeds in olive oil until golden and fragrant. Add onions and cook for 3 minutes. Stir in tomatoes and cook for an additional 3 minutes. Mix in cauliflower and potatoes, then season with curry powder and salt. Cook until heated through, about 3-5 minutes. Serve hot.
