Classic Indian aloo paratha: a beloved crowd favorite for all ages.
Ingredients:
  • 3 medium potatoes, peeled and cubed
  • 4 teaspoons vegetable oil, divided, or as needed
  • 0.25 teaspoon cumin seeds
  • 2 green chile peppers, minced
  • 6 fresh curry leaves
  • 0.5 teaspoon minced fresh ginger
  • 1 pinch ground turmeric, or to taste
  • salt to taste
  • 5 cups whole wheat flour, divided
  • 1.25 cups water
Instructions:
  • Set up a steamer in a saucepan and fill with water just below the steamer. Bring to a boil. Add potatoes, cover, and steam until tender, about 10-15 minutes. Remove from heat.
  • In a medium skillet over medium heat, bring 1 1/2 teaspoons of vegetable oil to temperature. Toast cumin seeds until light brown for 2 to 3 minutes. Mix in chile peppers, curry leaves, and ginger, and stir for about 1 minute. Combine with potatoes, turmeric, and salt, and cook attentively for about 5 minutes.
  • Move the potatoes to a bowl and let them cool for 15 minutes.
  • Put 1/2 cup of flour in a shallow bowl. In a large mixing bowl, mix the rest of the flour with 1 1/2 teaspoons of oil and salt to taste. Gradually add water while combining with your hands. Knead the dough until it forms a smooth ball, then divide it into 6 round balls.
  • Shape the dough balls into thick circles and place a cooled potato ball on top of each one. Fold the dough over the potato filling, covering it completely. Gently flatten each stuffed dough and coat both sides with flour from the bowl.
  • Shape the dough into thin circles and place them a few inches apart on parchment paper.
  • Heat a large skillet over medium heat and gently coat with the remaining oil. Cook each stuffed paratha for 2 to 3 minutes on each side until golden. Transfer to a serving plate and repeat with the remaining parathas. Serve hot.
