Amaretto Crème Brûlée

Decadent amaretto-infused dessert with rich cream and egg yolks. Deliciously gourmet, yet surprisingly simple to create.
Ingredients:
  • 6 egg yolks
  • 1/2 cup sugar
  • 1 pint (2 cups) whipping cream
  • 1/4 cup amaretto
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt
  • 2 tablespoons sugar
  • 1/4 cup sliced almonds, toasted
Instructions:
  • Preheat oven to 350°F. Arrange six 6-oz. oval or round ramekins or custard cups in a 13x9-inch pan. In a medium bowl, whisk together egg yolks and 1/2 cup sugar until fluffy. Stir in whipping cream, amaretto, vanilla, and salt until well combined.
  • Strain the mixture into a 4-cup measuring cup or another medium bowl, then divide evenly by pouring about 1/2 cup into each ramekin. Fill the pan with hot water to halfway up the sides of the ramekins and loosely cover with foil.
  • Bake at 350°F for 40-50 minutes until edges are firm but center has a slight jiggle. Let the ramekins cool on wire racks for 30 minutes, then carefully remove them from the water bath and pour out the water from the pan.
  • Place the ramekins in the same pan, cover them, and refrigerate for at least 3 hours or up to 24 hours before serving.
  • Sprinkle 1 teaspoon of sugar over each ramekin. Broil the custards 4 to 6 inches from the heat, watching constantly, for 1 to 4 minutes until the sugar bubbles and caramelizes. Chill for at least 1 hour or up to 3 hours to set the topping.
  • When ready to serve, generously sprinkle chilled crème brûlée with toasted almonds and store in the refrigerator.
