Elevate frozen treats with Amaretto and fragrant vanilla bean for a touch of elegance.
Ingredients:
  • 375ml (1 1/2 cups) thickened cream
  • 300ml milk
  • 1 vanilla pod, split
  • 100g (1/2 cup) caster sugar
  • 60ml (1/4 cup) amaretto liqueur
Instructions:
  • In a medium saucepan, combine the cream, milk, and vanilla pod. Simmer over medium heat until infusing takes place. Set aside for 20 minutes to enhance flavors. Use a small sharp knife to scrape vanilla seeds into the cream mixture. Remove and discard the pod.
  • In a bowl, vigorously whisk together egg yolks and sugar until they become thick and pale. Slowly combine the cream mixture with the egg mixture, stirring constantly.
  • Transfer the mixture to a clean saucepan over low heat. Stir continuously with a wooden spoon for 5 minutes or until the custard thickens. Take off the heat and let it cool for 5 minutes. Mix in the amaretto.
  • Transfer your mixture into a metal container, cover it with foil, and let it chill in the freezer for about 6 hours, or until it's nearly set.
  • Using a metal spoon, gently crush the ice-cream. Place in a bowl and use an electric beater to create a smooth texture. Transfer back to the container and cover with foil before freezing for at least 4 hours until solid. Enjoy alongside your favorite dessert.
