Ingredients:
  • 500.00 ml wholemeal plain flour
  • 4 large bananas
  • 1 tsp Pure Stevia Extract Powder
  • 21.00 gm lemon juice
  • 1.25 gm bicarb of soda
  • 4.00 gm baking powder
  • 0.60 gm table salt
  • 75.08 gm olive oil
  • 1 large egg
  • 131.25 gm fruit juice
  • 82.50 ml L.S.A
  • 125.00 ml nuts, chopped
Instructions:
  • Preheat the oven to 180C and prepare a medium loaf pan (7 1/2" x 3 1/2") by lining it with baking paper.
  • In a medium bowl, mash bananas and mix in lemon juice, stevia extract, and LSA. Set aside.
  • Combine flour, baking powder, baking soda, salt, and chopped nuts in a large mixing bowl; sifting is optional for the dry ingredients.
  • Whisk eggs in a small bowl and mix in oil, fruit juice, and vanilla extract. Combine with the banana mixture.
  • Gently fold dry ingredients into wet ingredients until just combined, taking care not to overmix to keep banana pieces in the loaf. Hand mixing is recommended for best results.
  • Transfer the mixture into a loaf pan and bake on the middle shelf in the oven for approximately an hour or until a knife or skewer inserted into the center comes out mostly clean (some stickiness from banana pieces is normal). Then, gently flip the loaf onto a cooling rack.
