Seasonal citrus beet salad with creamy goat cheese and crunchy walnuts. Vibrant and delicious flavor explosion.
Ingredients:
  • 600 g raw mixed-colour baby beets ideally with leaves
  • 4 clementines
  • ½ a bunch of fresh tarragon (15g)
  • 100 g crumbly goat’s cheese
  • 40 g shelled unsalted walnut halves
Instructions:
  • Separate out any small beautiful beet leaves. Boil larger beets in salted water for 15 to 20 minutes until tender. In a large bowl, combine the juice of 1 clementine, 1 tablespoon of extra virgin olive oil, and a splash of red wine vinegar. Peel the remaining 3 clementines, slice thinly, and place on plates. Drain and cool beets in cold water, then remove skins. Cut some beets in halves or slices, and toss all in the dressing. Season with salt, pepper, add tarragon, and mix with reserved beet leaves. Plate the salad, sprinkle with goat's cheese and walnuts, and finish with a drizzle of olive oil.
