Savory kale and lentil medley with carrots, onions, and zesty salsa.
Ingredients:
  • 1 cup shredded carrot
  • 1 cup chopped onion
  • 5 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 (16 ounce) package dry lentils
  • 1 (24 ounce) jar chunky-style salsa
  • 1 pinch cayenne pepper, or to taste
  • salt and ground black pepper to taste
  • 1 bunch kale, chopped
Instructions:
  • In a large pot, warm up olive oil over medium heat. Sauté shredded carrot, chopped onion, and minced garlic in the oil until softened, which should take about 5 to 7 minutes.
  • Add vegetable broth to the pot, mix in lentils and salsa, bring to a boil, cover, and simmer for 45 minutes until lentils are soft.
  • Add a pinch of cayenne pepper, a sprinkle of salt, and a dash of black pepper to the lentil mixture for a burst of flavor.
  • Mix the kale into the lentil mixture. Cover the pot and cook until the kale is wilted, about 3 to 5 minutes.
