Delicious egg muffins with hash brown crust, filled with sausage, bell pepper, and cheese. Perfect for breakfast at home or on the go!
Ingredients:
  • 12 links Johnsonville® Original breakfast sausage
  • 3 cups frozen country style shredded hash brown potatoes, thawed
  • 3 tablespoons butter, melted
  • 0.125 teaspoon salt
  • 0.125 teaspoon pepper
  • 2 cups shredded 4-cheese Mexican blend cheese
  • 6 large eggs, lightly beaten
  • 0.25 cup chopped red bell pepper
  • 1 teaspoon chopped fresh chives, or to taste
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and generously grease a 12-cup muffin pan.
  • 1. Preheat a nonstick skillet over medium-low heat. Cook sausage links, turning occasionally, until golden brown and the internal temperature reaches 160°F (70°C), about 12 to 16 minutes.
  • Combine hash browns, melted butter, salt, and pepper in a bowl, then firmly press the mixture into the prepared muffin cups while the sausage cooks.
  • Bake until golden brown, approximately 12 minutes in the preheated oven.
  • Slice the sausage into 1/2-inch pieces. Combine cheese, beaten eggs, and bell pepper in a bowl.
  • Take out the crispy hash brown crusts from the oven. Distribute the savory sausage evenly among the crusts, then generously ladle the fluffy egg mixture on top. Finish with a sprinkle of fresh chives.
  • Continue baking in the oven until fully cooked, for 13 to 15 minutes.
