Elevate your pasta game with chicory, cheese, and potato ravioli - a burst of delicious flavors in every bite!
Ingredients:
  • ¼ x Royal pasta dough
  • fine semolina for dusting
  • 1 radicchio or 2 red chicory (150g in total)
  • 1 large red onion
  • 80 ml balsamic vingar
  • olive oil
  • 1 bunch of fresh thyme (30g)
  • 300 g Maris Piper potatoes
  • 50 g Parmesan cheese plus extra to serve
  • 100 g fontina cheese
  • 75 g blanched hazelnuts
  • 40 g unsalted butter
  • extra virgin olive oil
Instructions:
  • Preheat the oven to 200ºC/400ºF/gas 6. Make the Royal pasta dough and let it rest. Prepare the filling by roasting radicchio and onions with balsamic and olive oil. Roast potatoes separately, then mash and mix with chopped vegetables, Parmesan, fontina, seasoning, and balsamic juices. Roll out the pasta dough, spoon filling down the strips, fold, and seal into ravioli shapes. Toast hazelnuts and cook ravioli in boiling water. In a frying pan, heat olive oil, butter, and thyme to make a sauce. Toss cooked ravioli in the sauce with Parmesan, then serve with hazelnuts, olive oil, more Parmesan, and balsamic juices. Enjoy with your guests!
