Make a classic pound cake with fresh or frozen strawberries. Batch makes 2 loaves - enjoy one, share one!
Ingredients:
  • 1 cup butter
  • 1.5 cups white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground almonds
  • 2 cups all-purpose flour
  • 0.33333334326744 cup milk
  • 1 cup quartered strawberries
  • 0.25 cup water
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease 2 loaf pans or 1 square baking dish.
  • In a large bowl, use an electric mixer to beat butter and sugar until light and fluffy. Add eggs one at a time, ensuring each one is fully blended before adding the next. Mix in vanilla extract and ground almonds with the final egg. Alternate adding flour and milk, mixing until just combined. Gently fold in strawberries and water until evenly distributed. Pour batter into prepared pans.
  • Once the oven has been preheated, bake until a toothpick inserted in the center comes out clean, which usually takes about 1 hour. Run a paring knife along the edges of the pans, then let the cake cool completely before removing.
