Amazing veggie chilli

Get the most out of your veggies by using them raw in a salsa and cooked in a stew for a burst of flavor.
Ingredients:
  • 4 large ripe tomatoes
  • 2 red onions
  • 2 sweet potatoes (250g each)
  • 3 mixed-colour peppers
  • 1 teaspoon cumin seeds
  • 1 teaspoon smoked paprika
  • 4 cloves of garlic
  • 1 lemon
  • 1 x 400 g tin of cannellini beans
  • hot chilli sauce
  • 250 g black rice
  • 1 bunch of fresh mint (30g)
  • 4 small flour tortillas
Instructions:
  • 1. Preheat a griddle pan to high heat. 2. Peel the onions, scrub the sweet potatoes, and deseed the peppers. 3. Set aside a small portion of onions, sweet potatoes, peppers, and one tomato for the salsa. 4. Chop the remaining vegetables into 4cm chunks and halve the remaining tomatoes. Grill in batches. 5. In a large casserole pan over medium-low heat, drizzle in 1 tablespoon of oil, then add cumin and paprika. Stir in chopped garlic, grated lemon zest, and grilled vegetables gradually. 6. Add beans with their juices, 1 ½ tins of water, and around 1 tablespoon of chili sauce. Season with salt and pepper, then simmer for 30 minutes or until thickened. 7. Cook rice according to package instructions. 8. Finely chop mint leaves with salsa vegetables, mix with lemon juice, and season to taste. 9. Warm tortillas on the griddle and stir chili sauce into yogurt. 10. Serve chili with black rice, salsa, yogurt, tortillas, and mint leaves. Enjoy!
