Spiced venison and pork sausage meatloaf with a splash of brandy for extra flavor, perfect for entertaining.
Ingredients:
  • 1.5 pounds ground venison
  • 0.5 pound pork sausage (such as Jimmy Dean®)
  • 1 onion, chopped
  • 2 onion sandwich buns (such as S. Rosen's®)
  • 2 large eggs
  • 1.5 fluid ounces brandy (such as Christian Brothers®)
  • 1 tablespoon bacon grease
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon red pepper flakes
  • 0.5 teaspoon seasoned salt (such as LAWRY'S®)
  • 0.5 teaspoon garlic and herb seasoning (such as McCormick®)
  • 0.5 teaspoon finely ground black pepper
  • 0.25 teaspoon ground sage
Instructions:
  • Preheat the oven to 350°F (175°C) and generously coat an 8x4-inch loaf pan with cooking spray.
  • Combine the venison, pork sausage, and onion in a large bowl until well blended. Briefly rinse the onion buns under running water, squeeze out the excess water, and crumble into small pieces. Add the crumbled onion buns to the meat mixture and mix until fully combined.
  • Combine eggs, brandy, bacon grease, Worcestershire sauce, thyme, red pepper flakes, seasoned salt, garlic and herb seasoning, black pepper, and sage with the meat mixture until fully incorporated. Place the mixture into the loaf pan as directed.
  • Roast in the oven until beautifully golden and the juices are clear, for about 60 to 70 minutes. Ensure the center reaches a minimum of 160 degrees F (70 degrees C) using an instant-read thermometer.
