Amazing White Clam Sauce

Beloved recipe from ex, now a regular favorite with husband. Simple and hearty dish enjoyed bi-weekly with garlic bread.
Ingredients:
  • 0.5 cup olive oil
  • 1 large onion, chopped
  • 6 cloves garlic, minced
  • 1 pinch red pepper flakes, or to taste
  • 1.75 cups half-and-half cream
  • 3 (6.5 ounce) cans minced clams, drained with juice reserved
  • 0.25 cup grated Parmesan cheese for topping
  • 1 (8 ounce) package dried linguine pasta
Instructions:
  • In a large skillet over medium-high heat, heat olive oil. Add onion and red pepper flakes, cook stirring constantly until onion is tender. Add garlic, cook for a couple of minutes until fragrant. Pour in the reserved clam juice, simmer over low heat for 10 minutes.
  • Gently mix the half-and-half cream into the skillet and let it simmer gently for 20 minutes without boiling. Meanwhile, start cooking the linguine and make the garlic bread.
  • Bring a large pot of salted water to a rolling boil. Add linguine pasta and cook until al dente, about 8-10 minutes.
  • Gently simmer clams in the sauce until just heated through to keep them tender. Remove from heat and pour over a bed of linguine pasta. Finish with a sprinkle of grated Parmesan cheese for the perfect finish.
