Ingredients:
  • 1 (.25 ounce) package active dry yeast
  • 0.25 cup warm water (110 degrees F/45 degrees C)
  • 5 cups all-purpose flour
  • 3 tablespoons white sugar
  • 1 tablespoon baking powder
  • 2 teaspoons salt
  • 1 teaspoon baking soda
  • 2 cups buttermilk
  • 0.75 cup shortening
Instructions:
  • In a small bowl, mix yeast with warm water until creamy, then let it stand for about 5 minutes.
  • In a large bowl, blend flour, sugar, baking powder, salt, and baking soda. Add shortening and blend with a pastry blender until mixture resembles coarse meal.
  • Combine the buttermilk with the yeast mixture, then mix it with the dry ingredients until just combined. Transfer the dough onto a floured surface and knead briefly 4 to 5 times.
  • Roll the dough on a lightly floured surface until it's 1/2 inch thick. Cut out twenty-four 2 1/2-inch circles and place them on lightly greased baking sheets, ensuring they are slightly touching. Cover and let rise in a warm, draft-free place until almost doubled in size, for about 1 hour.
  • Preheat the oven to a toasty 425 degrees F (220 degrees C).
  • Bake biscuits in the hot oven until they turn golden brown, about 10 to 12 minutes.
