Summer Angel Hair Pasta: Shallots, garlic, clams, cherry tomatoes, and basil combine for a delicious dish.
Ingredients:
  • 30 cherry tomatoes, sliced in half
  • 1/4 teaspoon salt
  • 4 tablespoons fresh basil, chopped, divided
  • 1/4 cup extra virgin olive oil
  • 1/2 cup sliced shallots
  • 2 cloves garlic, minced
  • 2 6-ounce cans chopped clams (and their juices)
  • 8 ounces capellini or angel hair pasta
  • Salt for the pasta water
Instructions:
  • Combine savory salt and aromatic basil with juicy cherries: Place sliced cherry tomatoes in a bowl and toss with 1/4 teaspoon of salt and 2 tablespoons of chopped fresh basil. Set aside.
  • Bring a pot of salted water to a vigorous boil with 4 quarts of water and 2 tablespoons of salt. Meanwhile, prepare the shallots and garlic and begin making the sauce.
  • Prepare a delicious tomato clam sauce by heating olive oil in a large sauté pan over medium heat. Sauté the sliced shallots until translucent, then add the garlic and cook for 30 seconds. Stir in the tomatoes and cook for 2 minutes before adding the chopped clams with their juices. Simmer on low while the pasta cooks.
  • Cook the pasta in boiling salted water until al dente, about 2 minutes. Drain the pasta, saving 1/4 cup of the pasta water. Incorporate the reserved pasta water into the sauce in the sauté pan.
  • Mix pasta with sauce: Toss the pasta with the cherry tomato mixture and stir in the remaining 2 tablespoons of fresh basil. Serve promptly.
