Angel hair pasta with smoked trout, rocket, chilli and lemon

Delicious one-pot seafood pasta dish.
Ingredients:
  • 60ml (1/4 cup) fresh lemon juice
  • 60ml (1/4 cup) olive oil
  • 1/2 tsp chilli flakes
  • 2 garlic cloves, crushed
  • 500g dried angel-hair pasta
  • 20.00 ml finely grated lemon rind
  • 2 bunches rocket, ends trimmed, washed, dried, thinly shredded
  • 2 x 150g pkts smoked trout portions, skin removed, flaked
  • 62.50 ml chopped fresh continental parsley
  • Chopped fresh continental parsley, extra, to serve
Instructions:
  • Combine the lemon juice, oil, chili, and garlic in a small bowl and whisk until well blended.
  • Cook the pasta in a large saucepan of salted boiling water according to package instructions until al dente. Add the lemon rind during the last minute of cooking, then drain and return to the pan.
  • Combine the lemon juice mixture, rocket, trout, and parsley with the pasta, toss well to mix. Season with salt and pepper. Serve in individual bowls and garnish with extra parsley.
