Delicious apricot preserve cookies with customizable coconut or pecans, also great with peach preserves.
Ingredients:
  • 0.5 cup butter flavored shortening
  • 1 (3 ounce) package cream cheese, softened
  • 1 tablespoon milk
  • 0.25 cup brown sugar
  • 0.25 cup apricot preserves
  • 1.25 cups all-purpose flour
  • 1.5 teaspoons ground cinnamon
  • 0.5 cup chopped pecans
  • 1 cup confectioners' sugar
  • 1 tablespoon butter flavored shortening
  • 0.25 cup flaked coconut
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare your baking sheets by greasing them or lining them with parchment paper.
  • In a medium bowl, mix the 1/2 cup shortening, cream cheese, and milk until smooth. Add brown sugar and 1/4 cup apricot preserves. Combine flour, baking powder, cinnamon, and salt; fold into the batter. Gently fold in the pecans. Spoon rounded dough onto a cookie sheet, spacing them 2 inches apart.
  • Bake in the preheated oven for 8 to 10 minutes. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  • Prepare the frosting by mixing confectioners' sugar, apricot preserves, and 1 tablespoon shortening until smooth. Frost the cooled cookies and sprinkle with coconut for extra flavor.
