Whip up a delicious prawn pasta using the freshest ingredients for a fast and flavorful weeknight dinner.
Ingredients:
  • 20 medium green king prawns
  • 1 red onion, finely chopped
  • 1 stalk celery, finely chopped
  • 275g cherry truss tomatoes, halved
  • 250.00 ml basil leaves or rocket
  • 1 long red chilli, seeded, thinly sliced
  • 1 lemon, zested, juiced
  • 400g dried capellini pasta (angel-hair pasta)
  • Extra virgin olive oil, to drizzle
Instructions:
  • Prepare the prawns by peeling and deveining them, then cut each prawn into thirds.
  • In a large frying pan over high heat, sizzle the onion and garlic in oil until softened, around 4 minutes. Toss in prawns, celery, tomatoes, half the basil, chilli, lemon zest, and juice. Cook for 5 minutes, stirring occasionally, until prawns are tender. Season with salt and pepper, and take the pan off the heat.
  • Boil pasta in a generous amount of salted water until perfectly cooked. Drain thoroughly, saving 2 tablespoons of the cooking water.
  • Place pasta into the pan with the prawn mixture over medium-high heat. Pour in the reserved cooking water and cook for 3 minutes, tossing occasionally until everything is well combined and heated through.
  • Distribute the pasta evenly into preheated bowls, sprinkle with the rest of the basil, add a dash of freshly ground black pepper, drizzle with high-quality extra virgin olive oil, and serve right away.
