Delicious Victorian-inspired appetizer: Oysters wrapped in bacon, grilled, and finished with a citrus twist. Perfect for holiday gatherings!
Ingredients:
  • 16-32 small oysters (or scallops), or larger ones cut in half, shucked
  • 8-16 slices of thin-cut bacon
  • 16-32 wooden toothpicks
  • 3-4 limes or lemons
Instructions:
  • Cook the bacon slices in a large frying pan over medium-low heat until halfway cooked but not crispy. To prevent the oysters from overcooking later, ensure the bacon is not fully cooked. Let the bacon cool.
  • Preheat the grill until it's sizzling hot, while you prepare the oysters for wrapping.
  • Wrap half a slice of bacon snugly around the small oyster, securing it with a toothpick. Slightly overlap the bacon edges by about an inch for the best results.
  • Grill or broil the oysters and bacon over high heat for 5 to 6 minutes until crisp on one side. Flip and cook for another 2 to 4 minutes, turning occasionally for even crispiness.
  • Squeeze fresh lemon or lime juice over the food right after cooking and serve hot.
