Authentic Italian Pizzelles infused with anise oil. Requires pizzelle iron. Yields a generous batch.
Ingredients:
  • 12 eggs
  • 2 cups white sugar
  • 2 cups vegetable oil
  • 0.5 teaspoon anise oil
  • 1 (1.5 fluid ounce) jigger whiskey
  • 4 cups all-purpose flour
Instructions:
  • Combine eggs, sugar, vegetable oil, anise oil, and whiskey in a large bowl. Whisk until smooth. Slowly add flour and mix until fully combined. Cover and chill in the refrigerator overnight.
  • Preheat a pizzelle iron, lightly spray with cooking spray, then spoon batter onto the patterns. Close the lid and cook for about 1 1/2 minutes until no steam escapes. Adjust cooking time if needed. Gently take out cookies, let them cool, and store in an airtight container at room temperature.
