Authentic Italian recipe passed down from beloved Nonna Nancy, a culinary inspiration.
Ingredients:
  • 1 cup butter, room temperature
  • 2.5 cups white sugar
  • 2 teaspoons vanilla extract
  • 8 eggs
  • 7 teaspoons baking powder
  • 8 cups all-purpose flour
  • 2 teaspoons anise extract
  • 3 teaspoons anise seed
  • 1 cup chopped walnuts
  • 2 egg yolks, lightly beaten
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C).
  • In a large bowl, beat the butter and sugar until creamy. Slowly mix in the vanilla and eggs. Combine the flour and baking powder, then blend into the egg mixture. For plain biscotti, skip additional ingredients. Mix in the anise extract, anise seed, and add walnuts if preferred.
  • Prepare your hands by either wetting them or greasing them, then shape the dough into 4 logs as long as your baking sheet allows. Flatten each log to about 3/4 inch in height and 3 inches wide, then generously brush them with beaten egg yolks.
  • Bake in the preheated oven for 15 minutes until golden brown. Then, slice logs diagonally into 1/2 to 3/4-inch wide cookies. Place slices back on the cookie sheet, leaving space between each slice. Bake for another 10 minutes until cookies are dry and lightly toasted.
