Anise-infused German springerle biscuits - worth the time and effort.
Ingredients:
  • 1 pound confectioners' sugar
  • 4 eggs, beaten well
  • 2 teaspoons boiling water
  • 2 tablespoons anise seed
  • 1 tablespoon lemon zest
  • 4 cups sifted all purpose flour
  • 2 teaspoons baking powder
Instructions:
  • Combine confectioners' sugar and eggs in a large bowl and beat until thick and creamy.
  • Combine anise seed with water in a bowl and let it steep for 2 to 3 minutes. Beat the steeped anise mixture and lemon zest into the egg mixture.
  • Measure and sift flour again. Combine with baking powder. Beat flour mixture into egg mixture until dough forms. Divide dough into flat rounds, wrap each in waxed paper, and refrigerate for 1 hour.
  • Roll out dough on a dusted flat surface, shape cookies with a springerle roller, cover, and let dry for at least 6 hours or overnight. Transfer to baking sheets.
  • Preheat the oven to 375°F (190°C) for a perfectly heated cooking environment.
  • Bake in preheated oven until edges are lightly golden, about 12 to 15 minutes, working in batches as needed.
