Light and soft anisette toast, a delightful twist on traditional biscotti. Perfect with coffee or anytime.
Ingredients:
  • 2 teaspoons baking powder
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.25 cup softened butter
  • 3 eggs
  • 4 teaspoons anise extract
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C). Combine flour, baking powder, baking soda, and salt in a bowl; give it a good mix and set it aside. Grease 2 baking sheets.
  • In a large bowl, use an electric mixer to whip the butter and sugar until fluffy. Add eggs one at a time, fully incorporating each before adding the next. Mix in anise extract with the last egg. Gently fold in the flour until just combined. Shape the dough into two 12-inch long, 1/2-inch thick logs and place them on baking sheets.
  • Bake in the preheated oven for 20-25 minutes until golden and firm. Allow to cool for 5 minutes before serving.
  • Slice the ingredient into 3/4-inch thick pieces with a serrated knife and arrange them cut-side-down on the baking sheets.
  • Bake for 5 to 10 minutes until the bottoms are golden brown. Flip the cookies and bake for an additional 5 to 10 minutes until the other side is golden brown. Cool on a wire rack before serving.
