Vibrant Italian trifle: Anisette cookies soaked in cherry rum, layered with vanilla and chocolate pudding, topped with whipped cream and almonds.
Ingredients:
  • 1 (10 ounce) jar maraschino cherries
  • 1 teaspoon rum flavored extract
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 1 (3.9 ounce) package instant chocolate pudding mix
  • 2 (3 ounce) packages ladyfinger cookies
  • 1 pint heavy cream
  • 1 teaspoon white sugar
  • 2 ounces almonds, lightly toasted
Instructions:
  • In a small bowl, combine drained cherry juice with rum; set aside. Prepare vanilla and chocolate puddings in separate bowls following package instructions. Let them set for 5 minutes.
  • Arrange a snug layer of cookies in a 9x13 inch baking dish, cutting some cookies if necessary to ensure a perfect fit.
  • Drizzle one-third of the cherry juice mixture over the cookie layer and generously spread vanilla pudding on top, making sure to reach the edges of the pan. Repeat this process with another layer using cookies, cherry juice, and chocolate pudding. Finish off with a final layer of cookies and the remaining cherry juice mixture.
  • Whip cream and sugar in a medium bowl until soft peaks form. Top dessert with the whipped cream, sprinkle with almonds, and garnish with whole cherries. Chill for at least 2 hours before serving.
