Zuppa di Pesce e Frutti di Mare (Mediterranean Seafood Soup)

Authentic Mediterranean seafood soup with fish, prawns, clams, and mussels simmered in homemade fish stock with vegetables.
Ingredients:
  • 0.75 pound cod
  • 0.5 pound prawns
  • 1 onion, quartered
  • 1 carrot, chopped
  • 1 stalk celery, chopped
  • salt and ground black pepper to taste
  • water to cover
  • 6 tablespoons extra-virgin olive oil
  • 0.5 small onion, sliced
  • 1 red chile pepper, chopped
  • 1 clove garlic, minced
  • 0.5 cup dry white wine
  • 0.5 pound tomatoes, chopped
  • 0.5 pound clams in shell, cleaned
  • 0.5 pound mussels, cleaned and debearded
  • 4 slices bread, or more to taste
  • 1 clove garlic, halved
  • 1 bunch fresh parsley, chopped
Instructions:
  • Cut the cod into pieces, saving any leftover scraps. Peel and devein the prawns, saving the shells and any other scraps.
  • In a large saucepan, combine cod scraps, prawn scraps, onion, carrot, celery, salt, and pepper. Cover with water and bring to a gentle boil. Simmer for 15 to 20 minutes until the fish stock is aromatic.
  • Sieve and keep fish stock.
  • In a saucepan over medium heat, sauté sliced onion, red chile pepper, and minced garlic in olive oil until softened, for 5 to 10 minutes.
  • 1. Pour wine into the pot and let it simmer for 5 minutes. Stir in tomatoes and bring to a boil. Add cod, prawns, clams, and mussels, then pour in 1 cup of fish stock. Cook at a simmer until the fish is done and the clams and mussels have opened, around 15 to 20 minutes.
  • Toast bread in a toaster until golden brown. Rub one side of the toasted bread with garlic halves.
  • Start by adding a crispy piece of toasted bread to each serving bowl. Pour generous amounts of soup over the toast and finish off with a sprinkle of fresh parsley on top.
