Anise cookies: Tender, soft, and drizzled with anise icing. Ideal for cookie swaps or holiday gatherings.
Ingredients:
  • 4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.75 cup vegetable oil
  • 0.5 cup milk
  • 2 large eggs
  • 1 tablespoon anise extract
  • 1 cup confectioners' sugar
  • 2 tablespoons hot water
  • 1 teaspoon anise extract
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare your cookie sheets by greasing or lining them.
  • In a large bowl, mix flour, sugar, and baking powder. Create a hole in the center and add oil, milk, eggs, and 1 tablespoon anise extract. Mix until a dough forms. Shape dough into walnut-sized balls, slightly flatten them, and arrange 1 inch apart on lined cookie sheets.
  • Bake in the oven until edges turn golden, for about 8 minutes.
  • Prepare the icing by combining confectioners' sugar, hot water, and 1 teaspoon of anise extract until it forms a smooth mixture. Drizzle the icing over the warm cookies and let them cool completely.
